The original Italian pizza is cooked in a wood-burning oven at 450-550 ° C for 1 minute. Thanks to this, it comes out elastic and crispy on the outside. To simulate as much as possible a wood-burning stove with a high temperature at home, I recommend using the powerful heating (bottom) + fan mode. It is important to put the baking sheet not in the middle of the oven, but on the lower level, and set the temperature to 250 ° C. Then the pizza will be perfect, not wet, well baked and very tasty! If you have an old oven, unlike a modern one, it does not always close hermetically. Therefore, in such an oven, set the maximum heating temperature and pre-heat the oven itself very well. Then the pizza turns out with dry crispy edges and a juicy center.
