Sorrel is a healthy herb with an original taste. Its season, fresh and young, is rather short, about two weeks. Then the leaves become coarse, from which the quality of the sorrel becomes worse. But it must be borne in mind that the seeds of the plant are planted in the summer for a long time. Sorrel should be harvested until arrows begin to form on the plant. If it is not possible to plant sorrel during the summer, it must be prepared for future use in order to prepare traditional dishes with it in winter, a list that surprises with its variety. These are soups, cabbage soup, green borscht, salads, sauces, pie fillings … Sorrel enriches the taste and gives a unique natural sourness to the dish.

Sorrel is canned in jars, but it is more convenient to freeze it. Frozen greens cannot be compared with canned ones, because all vitamins are preserved in frozen form and taste is not lost. Plus, it's very easy to do. The main thing is to have free space in the freezer. For freezing, you can use wild-growing sorrel, but better cultured, because its leaves are larger and softer. So, if you have a large harvest of sorrel, and you do not know what to cook from it, I suggest freezing it for future use.

1. Sort out the leaves. If the leaves have long stems, tear them off. Whether or not to cut off the stems is up to the cook. As some argue that they need to be cut off and thrown away. Others say that their taste is no different from the leaves and can be eaten.

Place the leaves in a colander and rinse thoroughly under running cold water. If the sorrel is too dirty with soil and grains of sand, place it in a large container of water. There should be a lot of water for this procedure so that the grains of sand settle to the bottom of the dish.

2. Place the washed leaves on a cotton towel to dry. Put a dry towel on top and blot them. Simply shaking the greens off the water is not enough, otherwise freeze a lot of excess liquid.

3. Cut the dried plant across into small pieces, about 4 cm. If the leaves are small, you do not need to cut them.

4. Place the chopped sorrel in a special plastic bag.

5. Remove all air from the bag and tie it up. Do not forget to attach or attach a signed label, as after a while it will be difficult to figure out what kind of greens are stored: onions, dill, spinach, sorrel …

Send the sorrel to freeze in the freezer at a temperature not lower than -15 ° C. Store it until the next harvest.
