Comparing it with the classic English muffin, we can say that this pastry stays fresh, aromatic, fluffy and soft for much longer. The way to prepare it is quite simple. The products are whipped with a mixer until smooth, alternately adding all the components.

The basis for the preparation of the dessert is a lush curd cream with an attractive curd-creamy aroma. In the classical technology, salt is not even added to such a dough - it enhances the aroma of eggs and butter, and mutes the smell of cottage cheese.

Often, in an effort to diversify the recipes of curd cakes, chefs add all kinds of ingredients to the dough, such as raisins, dried apricots, nuts and other fruit additives. This gives the dessert a completely new sound, making its taste unique.

  • Cottage cheese - 250 g
  • Flour - 200 g
  • Butter - 100 g
  • Egg - 1 pc.

1. Place the egg in a convenient beating bowl and add sugar to it.

2. Beat the egg white with a mixer and increase in volume by 2 times. Then add the softened butter and beat the mass again. Since the butter should be at room temperature, remove it from the refrigerator in advance. If your curd is very fatty, then reduce the amount of butter to 50–70 grams.

3. Add cottage cheese to the container and beat the food with a blender. Since it is necessary to break the curd lumps, and so that the mass becomes a homogeneous consistency. Otherwise, it is advisable to grind the cottage cheese through a sieve.

4. Then add flour into the dough and stir in gently.

5. Grate the orange zest, which add to the curd mass, put the baking soda and mix well.

6. Grease the baking tins with butter and spread the dough evenly in them. Preheat the oven to 180 degrees and bake the muffins on the lower setting for about 40 minutes. Then, right in the oven, let them cool well. Then remove from the molds, sprinkle with powdered sugar and serve dessert with freshly brewed tea.
