In appearance and color, peach jam resembles quince or apricot jam, but in order to cook jam with a pleasant consistency and structure, you need to adhere to several rules:

  1. You need to choose the right fruits - they should be firm, but not green. If you take overripe, the slices will not work, because the slices will boil. Leave these fruits for the jam.
  2. Be sure to add citric acid or lemon juice to the jam. This is necessary for the syrup to remain clear.
