1. Wash the chicken parts and dry well with a paper towel. To make the dish more juicy, I recommend using the fatty parts of it, the lower leg, wings, and thighs. Although chicken fillet will work too, only it will have to be pre-marinated in milk or wine. This will help the meat to become softer and more tender.

2. Wash the champignons, dry and cut into 2 parts. If the mushrooms are too large, cut them into 6-8 pieces.

3. Place the cast iron cookware on the stove, add oil and heat well. Then send the chicken to roast. Set the heat to high and grill the chicken until medium golden. The high temperature will allow the meat to immediately crust over and retain all the juiciness.

4. Then add mushrooms to the meat. Do not add mushrooms until the meat is browned. Since mushrooms release a lot of liquid during frying, and the meat will no longer be fried, but stewed.

5. Fry the food for about 10 minutes and add the sour cream. You can replace it with cream or tomato paste. Also add salt, pepper and any spices to taste. I added curry and red paprika powder. These spices combine well and complement the flavor and aroma of the dish.
