  • Soy sauce - 1, 5 tablespoons
  • Salt - a pinch
  • Lemon juice - 1/3 tsp
  • Ground black pepper - a pinch
  • Seasoning for fish - 1/3 tsp

1. For the recipe, it is important to take live crucians, because their meat has an exceptional tenderness and sweetish taste. Chilled and gutted carcasses lose these flavoring properties. Live carp can be purchased at the market or in a large supermarket.

So, peel the carp of the husk. This can be done with a knife or a special scraper. Cut open the belly and carefully remove the insides so as not to damage the gallbladder, which will add bitterness to the sweetish fish meat. Then peel off the black thin film from the tummy and remove the gills. If you wish, you can cut off the head and tail. After cleaning the carcass, wash it under running water and dry it with a paper towel.
