Previously, these blue-purple fruits were mostly pan-fried on the stovetop. A tasty treat turned into a fatty dish with an abundance of carcinogens, because eggplants absorb a lot of oil during frying. But modern technologies have stepped forward, providing a lot of highly functional equipment, such as an oven, microwave, multicooker, double boiler. And along with them, many different recipes appeared. Today we are preparing a dish that, perhaps, occupies the highest level in popularity - baked eggplant with sauce in the oven.

Baked eggplant is not only tasty, but also a healthy dish that is combined with a huge number of ingredients. The vegetable itself is good for a balanced diet. It is a source of substances valuable for the body: phosphorus, iron, potassium, vegetable proteins … When baked in the oven, the vegetable does not absorb oil and other fats, so it turns out to be very useful. Cooking eggplants in the oven is very easy. Even the most inept housewife can cook the dish, because spoiling the fruit is almost impossible.

Ingredients:

  • Eggplant - 3 pcs.
  • Garlic - 1 clove
  • Mustard - 1 tsp
  • Ground black pepper - a pinch
  • Hot pepper - 0.5 pods
  • Salt - 0.5 tsp or to taste
  • Olive oil - 2 tablespoons
  • Soy sauce - 3 tablespoons

1. Rinse the eggplants under running water and pat dry with a paper towel.

2. Prepare the sauce. To do this, combine soy sauce, olive oil, mustard, chopped clove of garlic and hot pepper in a deep container. Stir and taste. Add salt and black pepper if necessary. Stir the sauce well.

3. Cut the eggplants into large pieces and place on a baking tray.

Note: Choose fruits that are medium-sized, evenly colored, juicy, with green tails. It is important that they are young, then bitterness will not have to be removed from them. If the vegetable is ripe, then it must be properly prepared for baking, i.e. remove bitterness from them. To do this, add salt to the cut fruits and leave for 20 minutes. Then rinse under running water, and all the bitterness will be removed along with the juice.

4. Pour the prepared sauce over the eggplant.

5. Send them to bake in a preheated oven to 180 degrees for half an hour. Serve ready-made baked eggplants with sauce in the oven to the table or cook any dishes from them.
