Many people prefer tender, hearty and fragrant lamb ribs. They are especially tasty in a wine marinade. The dish turns out to be juicy, soft and there is no need to fear that it will burn or be too dry. But still, you need to know some secrets of cooking lamb ribs.

  • Choose young lamb. Young lamb cooks faster and tastes more tender. It can be distinguished by its pink color and elastic structure.
  • Cut out the fat, because it is the source of a specific odor.
  • Before cooking, the meat should be at room temperature, then it will be more juicy.
  • Rinse the ribs before pickling and be sure to dry well. Drops of water prevent the penetration of spices, and during the frying process they will soar, which will make the meat not baked, but boiled.
  • Pork ribs are divided along the bones, but for convenience, you can shorten them even more. It is also delicious to cook them whole, not cut into layers.
  • For pickling, besides wine, any other seasonings are used: mustard, adjika, mayonnaise, sour cream, soy sauce, ketchup, tomato paste, dry seasonings …

  • Lamb ribs - 1 kg
  • Cilantro - a few twigs
  • Salt - 0.5 tsp
  • White or red dry wine - 100 ml
  • Ground black pepper - a pinch
  • Saffron - 0.5 tsp
  • Garlic - 2 cloves
  • Ground nutmeg - 0.5 tsp
  • Soy sauce - 3 tablespoons
  • Hops-suneli spice - 1 tsp
  • Dill - a few twigs

1. Wash dill and cilantro, dry with a paper towel and chop finely. Peel the garlic and pass through a press or finely chop with a knife.

2. Combine chopped herbs, garlic, salt and spices (ground nutmeg, saffron, suneli hops, black pepper) in a bowl.

3. Pour wine with soy sauce to the spices and mix well. Wash the ribs, dry them dry with a paper towel and pour over a whole layer of meat with marinade. Although, if you wish, you can divide the ribs by bones.
