The technology for preparing date honey is quite simple: the fruits of the date palm are pitted, washed well, and then poured with hot water in a ratio of about 1: 1. Then you can simply leave the dates to swell for 3-4 hours, or you can boil them to speed up the process, in the latter case it is important to control the liquid level - it should always cover the fruits. However, it is not advisable to constantly add water so that you have to do this as rarely as possible, you need to install the smallest fire on the stove.

To obtain syrup, the dates are whipped with a submersible blender together with water, and then the syrup is squeezed out of the mass through cheesecloth. If it turns out not thick enough, it is additionally boiled for 15-30 minutes. However, it should be borne in mind that after cooling down, the honey will become thicker, so you should not be too zealous in the boiling procedure.

When preparing sweet syrup at home, it is not necessary to strictly adhere to the recipe, fluctuations in the proportions of dates / water may well be in the range from 1: 1 to 1: 2. In addition, you can always add additional ingredients to honey to create an original taste - vanilla, cinnamon, nutmeg, etc.
