These berries are traditionally used to make compotes, jelly, preserves and jams, but today we will make a dogwood sauce. If you are an experimenter and a lover of new flavors, this recipe is for you! What do we need?

This sauce is not only beautiful (it has a nice red-pink color), but also very healthy! Dogwood berries reduce blood glucose levels, therefore they are recommended for diabetes; no worse than rose hips, it fights against colds, improves immunity, has anti-inflammatory, antipyretic and antibacterial properties, and also helps the body recover from illness. Ingredients:

  • Cornel - 500 g
  • Garlic - 1-2 cloves
  • Salt - 1/2 tsp
  • Sugar - 1 tbsp. l.
  • Coriander beans - 1/2 tsp
  • Ground black pepper - 1/4 tsp.
  • Parsley greens - 1/2 bunch
  • Vegetable oil - 2 tbsp. l.

1. First of all, we sort out the berries, removing the twigs, and spoiled fruits, wash them under running water. Cornel (if it is not overripe) is a rather dense berry, so first you need to soften it a little by boiling it in a little water. The water should cover the berries slightly.

2. Bring the dogwood to a boil and simmer it over low heat for 10-15 minutes. Some berries will burst, but do not worry, they will not boil up into porridge. Having removed it from the stove, we drain the liquid, leaving it for later and let the dogwood cool.

3. When the berries are cool enough, grind them through a sieve. Be prepared: you have to sweat here. Dogwood berries are quite dry, even boiled it will not be so easy to separate it from the seeds; you will have to make an effort, but believe me, the result is worth it!

Advice: do not rush to throw away the dogwood seeds: after all, everything goes into business with a real hostess! A saucepan of water, a little sugar, if you like, a couple of apples - and here you have a fresh, slightly sour dogwood compote, which perfectly quenches your thirst.

4. The pulp of the dogwood, which we separated from the seeds, put the garlic, spices and parsley in a blender bowl and grind at high speed. Now the water in which the berries were cooked will come in handy - dilute the dogwood sauce with it, bringing it to the consistency you need. Use salt and sugar to balance the flavor.
