Today we will start our acquaintance with pork ears in Korean. This is a slightly spicy appetizer that goes well with a glass of vodka. It's quite inexpensive to cook them, and it's very simple. The main difficulty is to rinse them well in the ear canals and boil them, which is not very fast, since the cartilaginous tissue in them requires a longer cooking. Well, then you can do whatever you want with them, in this case we will marinate.

The peculiarity of Korean food is the abundant use of all kinds of spices, the main of which is red pepper. It is he who gives the national dishes a red-orange color. In addition, in Korea, pork ears are pickled according to several recipes. Everything is used there, since there are no unnecessary products in Korean cuisine. For example, chjim is an oxtail dish served to the royal family.

Selection and preparation of offal

Pig ears must be carefully cleaned, i.e. well greased and scraped off. At home, the remnants of the bristles must be scraped off, the ears must be rinsed, the ear canal must be cut open and all dirt removed from it. Next, the ears are placed in a cooking pot and boiled for about 2-3 hours on a small flame in salted water. After boiling, the ears are removed from the pan and left to cool. It is advisable to lay them out on a flat surface, otherwise it will be impossible to level them when cooled.

If the offal does not completely cool down, then in the finished dish the ears will stick together and turn into a homogeneous mass, like a coma. And the cooled ears preserve their integrity perfectly, and the finished meal will look much more appetizing.

  • Soy sauce - 2 tablespoons
  • Table vinegar 9% - 2 tablespoons
  • Onions - 1 pc.
  • Garlic - 2 cloves
  • Bay leaf - 2 pcs.
  • Allspice peas - 3 pcs.
  • Salt - 1 tsp or to taste
  • Ground black pepper - 1/2 tsp or to taste
  • Ground red pepper - pinch or to taste
  • Ground coriander - 1 tsp
  • Saffron - 0.5 tsp
  • Refined vegetable oil - 4 tablespoons

1. Prepare the pig's ear as described above - scrape, clean the ear canal and wash. Dip it in a saucepan, add the peeled onion, garlic cloves, bay leaf and peppercorns.

2. Fill the ears with drinking water and send to simmer for about 2-3 hours. Half an hour before cooking, season the ears with salt and black pepper.

3. After that, remove the ears from the pan and place them on a flat surface (board). Leave them there until they cool completely.

4. Meanwhile, while the ear cools, prepare the marinade. In the container in which you plan to marinate it further, pour vinegar, soy sauce, vegetable oil and put all the spices (black and red hot peppers, saffron and coriander). I advise you to add black and red peppers carefully so as not to overdo it. Put a little at first, and then add it better.

5. Stir the marinade and leave to infuse.

6. When the ears are completely cold, cut them into long strips and place in the marinade.

7. Mix them well and refrigerate for 1-1.5 hours.
