  • Lemon juice - 1-2 tbsp. l.
  • Bean broth - how much you need
  • Ground paprika - to taste
  • Ground black pepper - to taste
  • Salt to taste
  • Water - how much you need, at least 1 liter

Step by Step Cooking Lean White Bean Pâté

1. First you need to prepare the main ingredient - beans, it needs to be boiled. Pre-wash it, fill it with water and leave it overnight. During this time, the dry beans will swell, being saturated with water, and it will be easier to cook them. The beans are cooked long enough, you need to bring them to a boil, then turn the fire on and simmer until soft. Top up with cold water as needed. At the very end, add salt. Do not pour the broth in which the beans are boiled.

The beans will cook much faster and will have a richer taste if, after letting them boil for about 10 minutes, drain the water and pour cold water (half a liter of liquid is enough for such a volume) with a teaspoon of sugar. When the water boils, let it boil again for about 10 minutes. Drain the water several times and fill it with cold water with added sugar.

2. Lightly fry the sesame seeds in a dry skillet until soft golden brown. Do not overexpose the grains on the fire so that they do not burn.

3. Grind the fried sesame seeds in a mortar, pass a few cloves of garlic through a press and add to the boiled beans.
