1. The most important point in making a roll is filleting herring. To do this, first remove the film from the carcass. Then cut off the head and tail and rip open the belly. Remove all the insides and remove the black film from the inside of the tummy. Carefully separate the fillets from the ridge and carefully remove all bones, even the smallest and finest ones. Then wash the peeled fillets well under running cold water and dry with a paper towel.

2. Place the fillets on a board with the meat facing up and place the cling film on top.
