Duck is not a frequent guest on our tables. However, when this happens, a festive atmosphere is immediately felt in the apartment and the mood rises. Then the duck becomes a hit of the meal. Its meat has an amazing aroma, wonderful bright taste and just looks beautiful. In this article I will tell you how to bake it in a non-traditional way, as we mostly used to do it: with a whole carcass. I will share it with pieces, which I will bake in the oven mixed with vegetables. This is a tasty, not dry and not greasy dish, and most importantly, quite interesting and original, which is not difficult to prepare.

They can also say about the dish that you should not be afraid to experiment. You can supplement the set of vegetables based on your own taste and wishes. In addition, you can put all kinds of additives and spices. So, the duck "loves" thyme, dill, basil, parsley, as well as honey, wine, citrus fruits, onions, caraway seeds, ginger, soy sauce, cinnamon, star anise, olive oil, cardamom.

  • Garlic - 1 head
  • Soy sauce - 4-5 tablespoons
  • Mustard - 1 tsp
  • Salt - 1 tsp or to taste
  • Ground black pepper - a pinch

1. Purchase a duck first. This can be done in every major supermarket, where it is sold both fresh and frozen. Of course, it is advisable to choose a chilled fresh carcass. However, you shouldn't be afraid to buy frozen poultry. The main thing is to defrost it correctly, and then neither the taste, nor the benefits of the meat, nor a drop will suffer. To do this, you will need to defrost it for a long time in the refrigerator, and then at room temperature.

So, wash the duck and scrub it well from the black tan. Remove internal fat, especially at the back. Then cut the carcass into pieces, the size of which can be different to your taste.

2. Peel and wash all vegetables (potatoes, carrots, onions and garlic).

3. Find a convenient baking dish. It can be anything, but a glass or ceramic mold works well in my opinion. In it it will be possible to serve food directly on the table. In the center of the table, the food will look beautiful. Place the duck pieces in the chosen shape. By the way, you can not use all of it. For example, nobody likes my breast. Therefore, I do not bake it, but leave it for making pate or use it for salad.

4. Place vegetables on top of the duck. Season food with salt and ground pepper.

5. Prepare the sauce that you will pour on the food. Pour soy sauce into a small bowl, put mustard and any spices with spices. For example, I prefer to add basil, parsley, sweet ground paprika, ground nutmeg. Well, you can use whatever herbs you like.

6. Stir the sauce well and pour over the food. Heat the oven to 180 degrees and send the products to bake for 1, 5 hours. Bake them for the first hour under covered foil so that they become soft and baked well, and then remove it so that they are browned. Serve hot food immediately after cooking.
