It is important to observe some secrets in the cooking process:

  • Curd dough with semolina should be infused a little so that the cereal swells. Otherwise, semolina in finished products will grind on your teeth.
  • Choose cottage cheese that is dense and not too fatty. Cheesecakes made from soft, tender or fatty cottage cheese require the addition of a large amount of semolina or they will fall apart when frying.
  • If the curd is slightly dry, then add a little (1 tablespoon) milk or water to the dough.
