There are many ways to preserve plums for the winter. We dry it, preserve it in the form of compotes, cook preserves, marmalades, jams and mashed potatoes. But now freezing is gaining more and more popularity. Therefore, in this article, we will learn how to freeze plums in pitted pieces for the winter in the freezer. Such fruits can be stored for a year. You can use frozen sweet, cold plums straight from the freezer. With them, you can bake a plum cake, roll or make dumplings at any time.

To freeze, harvest or purchase ripe plums without damage, dents, or stains. Freeze only ripe, tasty and aromatic plums. Do not freeze unripe or overripe fruits, because after defrosting, their taste and aroma are unlikely to be pleasant to you. Before freezing, taste the fruit by taking a bite of one plum. If dark red juice splashed from a plum, and the selected fruit pleases with a sweet taste and aroma, then the rest of the fruits should be good. If the fruit pulp is tart or grainy, then it is better not to freeze them. And if the plums are a little hard, then leave them at room temperature for a few days to ripen, and when they are fully ripe, start freezing.

3. Cut the fruit in half with a knife and remove the seeds.

4. Cut the flesh into pieces or wedges. Although you can freeze a pitted plum in any way: in halves, quarters or whole berries, if you make an incision on only one side when removing the stone.

5. Fill the plums in a special freezer bag, filling it almost to the top, leaving 2.5 cm on top. Remove all air from the bag or use a vacuum pump to remove air from the bag. Send the bag to the freezer and freeze the fruit at -23 ° C. Take a bag every hour and chuckle so that the slices do not stick together into one lump.

But if you have free space in the freezer, then so that the berries do not stick together when freezing, lay them on a cutting board or pallet lined with cling film. As it is, send the plums to the freezer for about 4 hours, until they are firm and dry and no longer stick to your fingers when touched. Then put the fruit in a bag or plastic container for storage.

Store the pitted chunks of frozen frozen plums until the next harvest. You can use them to make a smoothie, cocktail, drink, dessert, pyro filling, etc.
