Step-by-step cooking of eggplants in a fan, baked in the oven with tomatoes and cheese:

1. Prepare all foods. Wash the eggplants and cut them lengthwise into plates 5-7 mm wide, bringing the knife to the stalk. I recommend selecting fruits that are young and large, so that it is convenient to cut them. Solanine, an unpleasant bitterness, will have to be removed from the old vegetable. To do this, sprinkle the sliced blue ones with salt and leave for half an hour. Then rinse off the released droplets of moisture, with which all the bitterness came out. Cut the tomatoes, sausage, garlic and cheese into thin slices. The tomato must be ripe, at the same time dense, otherwise the vegetable will spill on the cutting board, and when baked, it will generally turn into gruel. Choose a variety of cheese so that it melts well. I added the sausage for satiety, it can be used of any kind or even excluded from the recipe for a lean dish.
