Ingredients:

  • Flour - 1 kg
  • Milk - 200 g
  • Water - 200 g
  • Dry instant yeast - 10 g
  • Butter - 2 tablespoons
  • Egg - 1 pc.
  • Vegetable oil
  • Sugar - 3 teaspoons
  • Salt

Making fluffy cakes:

  1. Pour 200 g of hot boiled water into a jar, add 200 g of milk there, stir.
  2. Add 10 grams of dry instant yeast to this jar. Usually such small 10 gram sachets of yeast are sold, it is very convenient to use. You use just the right amount, and yeast in large bags can quickly deteriorate. But if I have to buy yeast in large bags, then I take exactly 2 teaspoons with a small hill, which is 10 g.
  3. Add 3 teaspoons of sugar and a bunch of salt to the jar.
  4. Thoroughly stir all the contents in the jar, close the capron lid and set in a warm place for 15 minutes. The yeast should dissolve during this time and a foam should appear in the jar over the liquid.
  5. Meanwhile, until 15 minutes have passed, take 2 tablespoons of butter and melt in a mug. After 15 minutes, pour the contents of this jar into a bowl.
  6. We add flour there, as for pancakes, 200 grams, so that the dough is not too liquid. Stir.
  7. Add 2 tablespoons of melted butter to the dough and stir again thoroughly.
  8. Beat 1 egg in a separate bowl and add to the dough, stir.
  9. Now you can gradually add the rest of the flour (800 g). Do not knead the dough strongly with your hands, so that it does not turn out too tight. Better to beat with a fist. Important: before you start kneading the dough, grease your hands generously with vegetable oil so that the dough does not stick.
  10. We cover this bowl with cellophane so that there is no air access and put in a warm place for about an hour.
  11. After an hour, the dough is ready, take small pieces and roll them out so as to give the cake a round shape. Remember to grease your hands and rolling pin with vegetable oil first.
  12. Heat the frying pan and pour enough vegetable oil into it to completely cover its surface.
  13. We fry the cakes on both sides, while the lid does not need to be covered.
