Cheese balls "Surprise" are a wonderful appetizer of a buffet and festive table, which can be served with a glass of beer, wine and other alcoholic beverages. Cooking them is absolutely simple, and all the necessary components of the dish are almost always available in the refrigerator.

Any cheese can be used for this recipe. The most budgetary one is melted, as in my recipe. But you can make an appetizer that is sophisticated and chic with Dor Blue cheese or another cheese you like the taste of. I advise you not to take unfamiliar types of cheese, since all cheeses have a specific taste and aroma, which may not be to everyone's taste.

The "surprise" of the snack is that an olive is hidden inside the ball. But it can be replaced with other products. For example, olive, grape, cherry tomato and other ingredients that you like. Well, now, if you like to feast on delicious food, while not thinking about extra calories, let's start cooking.

1. Remove the olives from the jar and put them in a sieve so that all the liquid is drained from them. Then wash the cucumber, dry and cut into thin strips, about 3-4 mm thick, 2-2.5 cm long. Stuff the olive with cucumber strips.

I also note that you can fill the olive with other products that you like best. For example, tomatoes, anchovies, shrimps, crab meat and other foods.

2. Grate the boiled egg and melted cheese on a medium or fine grater. I do not recommend using a coarse grater, otherwise the cheese balls will look rough.

Peel the garlic and pass through a press.

Combine all products in a container and pour mayonnaise for viscosity. Do not overdo it with mayonnaise, it is better to add it gradually. Since if the cheese mass is too liquid, then the balls will not work, because they will not hold their shape and will simply creep on the plate.

4. Now get down to shaping your snack. Take an olive and stick it with cheese mass. It is better to do this with damp hands so that the cheese does not stick to your fingers. Then roll the cheese ball in the sesame seeds and place them in a small bowl. Place the appetizer on the serving platter and set the table.
