Arrange 6 Savoyardi cookie halves in the portioned bowls. Sprinkle it with Amaretto liqueur and a couple tablespoons of freshly brewed coffee. Pour over with the mascarpone and beaten egg mixture. Refrigerate for one hour. Whisk a glass of raspberries in a blender, rub them through a sieve, freeing them from the seeds. Add 1 teaspoon sugar and 1 teaspoon cocoa. Add 300 g sugar or 200 g icing sugar, mix well. Add 1 cup of natural unsweetened yogurt. Transfer the mixture to a container and place in the freezer for 5-6 hours, stir every hour. Form ice cream balls. Serve with melted dark dark chocolate.
  3. Jelly … Soak 25 g of gelatin in strips in cold water for 10 minutes. Take 100 ml of pink champagne, heat it and add 100 g of sugar until it is completely dissolved. Send gelatin there, stir well and pour in another glass of pink champagne. Do everything slowly and carefully so that it does not foam. If there is foam, stir until it settles. Place whole raspberries on the bottom of the champagne glass, pour over the champagne to cover the fruits. Refrigerate for 15 minutes. Take it out, put the berries back in and fill with champagne again. You should have three layers in total. While they are solidifying, mash 2 yolks with 20 g of sugar. Heat 120 ml of heavy cream on a fire, without boiling, pour in the yolks, beat with a whisk. Keep on fire, stirring occasionally, for 1 minute. Pour the sauce through a sieve into a bowl in ice water. Whisk again. Send the cream to a glass, on jelly. Garnish with powdered sugar or cocoa meringue crumbs.
