  4. Boil the cherries for 20 minutes and drain in a colander to drain all the syrup.
  5. Grind the berries through a fine sieve.
  6. Pour vegetable oil into the resulting cherry puree, season with a mixture of ground peppers, add cloves and your favorite spices.
  7. Place the saucepan with fruit puree on the stove and bring to a boil.
  8. Chill the cherry syrup completely and dilute the starch in it. If you want the sauce to be not very thick, add 1 tbsp. starch.
  9. As soon as the fruit puree is about to simmer, add the vinegar (if making a winter sauce) and stir.
  10. Gradually add the diluted starch syrup.
