Potato pancakes are one of the national dishes of Belarus. It is no less common in Ukrainian, Russian, Polish and Jewish cuisine. True, each country has its own name. In Ukraine it is potato pancakes, in Russia - potato pancakes, in Israel - latkes.

Cooking potato pancakes is simple: grated, mixed, fried, and you're done. Served as a completely independent dish or as a hot snack and, of course, with sour cream or other sauce. And it is better to use them right away, hot, because heated pancakes are not the same.

They are prepared from chopped potatoes with the addition of eggs, onions, flour and spices. The set of ingredients for the recipe for potato pancakes is pretty standard, but each housewife has her own cooking secrets. Potato pancakes can be with different additives: with cheese, with meat, with herbs. I chop the carrots along with the rest of the vegetables and serve them with fried bacon and onions, hence the name "peasant".

For the preparation of potato pancakes, it is best to use the tubers of yellow potatoes, they contain a lot of starch, which means that the excess liquid will be formed several times less, and their taste is especially pleasant.

During the chopping process, the potatoes begin to darken quickly, so that this does not happen, it is necessary to grate the onion first, and then add the potatoes to it; or grind everything at the same time. Then combine with all the other ingredients, season to taste and fry on both sides until tender. Separately cook the bacon and onions and pour over the prepared pancakes. The result is a tender, ruddy and delicious dish that can be a hearty lunch or dinner.

1. Peel carrots, potatoes, one onion. Wash under running water, cut into large pieces, place in a blender bowl and grind to a pasty consistency. You can also use a fine grater for this, but the rubbing process will be much longer and more difficult.

2. If a little excess juice is formed from the chopped vegetables, it must be drained. Transfer the potato mixture to a convenient mixing bowl and add flour, eggs, salt and black pepper. Mix all ingredients well. It is not necessary to add flour at all, but to make sure that the pancakes will not fall apart when turning over in a pan, I always add a few spoons. You should know that if you overdo it with flour, then the pancakes will become hard and clogged.

3. Before cooking potato pancakes, place a frying pan on the stove, heat the vegetable oil in it and spoon the potato dough into tortillas with a spoon. Reduce heat to medium so they don't burn. Fry on both sides until golden brown. For a crisper crust on top, cook in an open skillet. If you want the pancakes to be soft and tender, then cover with a lid.

4. Cut fresh bacon into small strips and place in a preheated skillet. You can use ordinary bacon, but many prefer it with layers of meat, because it is tastier and more interesting this way. You don't need to add oil here, as the bacon itself is very fatty. When frying it, a lot of fat will be released, we do not need it, it will need to be drained.
