Okroshka is an irreplaceable cold soup in the sultry summer heat. It is tasty, healthy, satisfying, fresh. There are sooooo many options for its preparation. This is okroshka and kefir, and kvass, and whey, and mineral water, and broth. But the simplest and most acceptable option is okroshka in water with vinegar and mayonnaise. The principle of its preparation is no different from other types. The products are thoroughly washed, some of them are pre-heat treated, others are easy enough to clean. Then all the ingredients are cut into the same cubes, similar to the Olivier salad, seasoned with mayonnaise, mixed and filled with water. That's the whole complexity of this unpretentious dish.

The water in which okroshka is prepared does not have its own specific taste, so the taste of the ingredients that make up the dish does not interrupt. Mayonnaise, of course, adds calories to the dish, so if you are worried about your figure or do not want to burden your stomach with fatty foods, then take it with a low fat content of 28-30% or replace it with sour cream. Additional flavoring and intrusive notes of food will add lemon juice, mustard or chopped horseradish. And if suddenly okroshka turns out to be watery, then add some more vegetables.

  • Eggs - 5 pcs.
  • Mayonnaise - 400 ml
  • Table vinegar - 3-4 tablespoons
  • Salt to taste
  • Greens - on a bunch (dill, cilantro, parsley, basil, green onions)
  • Sausage or other dairy - 400 g
  • Water - 4 l
