You can stew absolutely any meat: pork, beef, veal, poultry - in any case it will turn out appetizing, of course, if the meat is stewed correctly. Stewing meat consists of two stages - roasting and stewing. Before starting to cook it, the whole piece of meat is cut into slices of the required thickness. But if the pulp of an adult animal is used, then the meat should first be beaten off with a kitchen hammer. This will soften the muscle fibers, which will significantly shorten the cooking time.

To make the pieces of meat attractive and retain the juice, they are fried exclusively over high heat. Then the meat "seals" the fibers and a crispy crust forms on it. After that, the meat can be mixed with chopped vegetables and stewed.

During stewing, it is important not to overexpose the meat in a saucepan, otherwise it will boil down. Steam is formed under the lid, which is retained in the container, which softens the meat, penetrating into its tissue. Therefore, the meat should be monitored, and when it reaches the desired softness, it should be immediately removed from the stove.

Stew the meat over low heat, stirring occasionally, or shaking the pan. The best utensils for stewing and frying meat are considered to be a cast-iron frying pan or rooster, or any container with thick walls and a bottom.

1. Wash and dry the meat with a paper towel. Then use a sharp knife to cut it into medium-sized pieces. The smaller the meat slices, the faster they will stew, they will be softer and juicier. Cuts of meat for stewing, I advise you to purchase with dense strained muscles, for example, a shoulder blade, neck or thigh.

2. Pour refined vegetable oil into a frying pan and heat it well. After that, send the meat to fry by setting a high fire.

3. Fry the meat, stirring occasionally.

4. While the meat is roasting, prepare the vegetables. Peel the onions, carrots and garlic and cut into small pieces, as shown in the photo. The principle of cooking is as follows - all products are cut into small slices. If you cut the meat coarser, then cut the vegetables coarser.

5. When the meat is browned, reduce heat to medium and send vegetables to fry.

6. Cook all foods for about 5-7 minutes, then season with salt and pepper.

7. Pour sour cream into a saucepan with meat, put bay leaves and peppercorns. You can also add any spices to taste, such as ground nutmeg or ginger.

8. Mix everything well and send the meat to the stove to simmer under a closed lid over low heat for 1 hour. Taste the meat periodically, as you feel the degree of doneness you need, remove the pan from the stove and serve the dish to the table. You can boil potatoes, rice or pasta for a side dish.
