  • Salt - a pinch
  • Kefir - 100 ml

  • Chocolate (black, milk, white) - 30 g
  • Sugar - 1 tablespoon or to taste
  • Pitted cherries - 10 pcs.
  • Vegetable oil - 2 tablespoons
  • Eggs - 1 pc.

Step-by-step microwave cooking of flourless oatmeal muffins:

1. Pour room temperature kefir into a deep container, add a raw egg, a pinch of salt and sugar. Whisk the liquid components until smooth so that there are no lumps left.

2. Add oatmeal to the mixture and stir. Add baking soda and mix well again. The dough should be slightly runny. During baking, the oatmeal will swell and absorb everything. But if you think the dough is too runny, add another spoonful of oatmeal.

3. Grate the chocolate on a coarse grater or cut into small pieces with a knife and add to the dough. I cut it so that there were chocolate slices in the dessert. If you wish, you can melt the chocolate in a water bath or in a microwave oven. Then the muffins will have a uniform chocolate color. You can also use chocolate drops or cocoa powder instead of crushed chocolate.

Add the pitted cherries to the chocolate. Berries can be used both fresh and frozen. Do not defrost frozen cherries, but immediately add to the dough.

If there are no cherries, you can add various other additives (nuts, raisins, flax seeds), berries (blackberries, strawberries, raspberries), fruits (slices of bananas, apples). And it is permissible to replace chocolate drops with instant coffee, peanut butter, baked goods will be no less tasty.

4. Stir the dough until smooth and pour into baking tins, filling 2/3 full. Remember that in the microwave the dough rises strongly, and after removing it drops. I used silicone molds for baking. It is not necessary to lubricate them with oil, it is enough in the prepared dough. If you don't have these molds, make a chocolate cake in any small microwave-safe container. For example, a mug, a cup, a small bowl. It is better to completely grease these containers with oil, the bottom and walls to the very top.

5. Microwave the muffins at maximum power. I got 4 tablespoons in one mold. masses. I baked them in the microwave at maximum power (I have 850 kW) for 3 minutes. But the cooking time can be different, it depends on the power of the device, the number of muffins and their volume. The more power, the less time it takes to prepare the cake. Watch the process while cooking. Check readiness after two minutes. When the cupcakes are ready, you know right away. At first, the dough will rise a lot, even slightly crawl out of the container. Then the smell of freshly baked pastry will appear and the muffins will harden, even look dry. Then remove them from the microwave oven.

Wait for the flourless oatmeal muffins to cool slightly in the microwave and remove them from the mold. If you're making cupcakes in a mug, you can eat them straight out of them with a dessert fork. If you are preparing one cupcake in a large bowl, cut it lengthwise into two pieces and brush with cream, jam, etc.
