As we said, the subiz sauce is prepared in two stages: first you need to prepare the béchamel, and then add a number of additional ingredients.

Prepare bechamel:

  1. Peel the onion (1 pc.), Cut into half rings.
  2. Put a saucepan with a thick bottom over low heat, pour milk (700 ml), put prepared onion and bay leaf (1 pc.), Bring to a boil, turn off the heat immediately, cover the pan with a lid and leave for 10 minutes.
  3. Melt butter (4 tablespoons) in a frying pan, gradually add flour (80 grams), do not forget to stir.
  4. Fry the butter and flour for a couple of minutes, then slowly pour in the prepared milk and onions, bring the mixture to a boil.
  5. Add salt and pepper to taste, reduce heat to low and cook for 20 minutes, stirring constantly, then strain the béchamel through a sieve.

Now that the base is ready, you can start making the subiz sauce:

  1. Finely chop the onion (1 cup), pour boiling water over it, cover and leave for 5 minutes, then drain.
  2. Melt the butter (3 tablespoons) in a saucepan, add the prepared onion to it and simmer until soft on a small flame.
  3. Now pour the béchamel (1 glass) into a saucepan and cook for another 15 minutes.
  4. Finally, add the cream (1 cup), salt if necessary, and turn off the heat after a couple of minutes.
