Description of poppy flour, industrial and home production. Caloric content and vitamin-mineral complex in the composition, the effect on the body. Cooking applications. Product myths.

Poppy flour is a food product, for the manufacture of which partially defatted seeds of edible poppy are used. Smell - neutral, taste - sweetish, pleasant, with a slight bitterness, color - from gray-yellow to light brown; structure - fine powder with a particle size of less than 300 microns. When stored properly in sealed multilayer paper packages and temperatures below 25 ° C, the beneficial properties are retained for 8 months.

To grind poppy seeds, use edible oil poppy with grains of black or dark gray. Harvesting begins when the bolls dry up - they become brown, with crunchy walls. Before removing the grain harvesters, the field is cleared of weeds.

Bolls with short stalks fall into the thresher of the unit, which, after the initial threshing, enter the hopper, and from there to the built-in elevator. Since the grains are very small, all viewing windows and flaps of the food auger are covered with burlap. A converted grain cleaning machine is used to separate the heap and remove the husk. Dry at 60 ° C. Storage - covered, well-ventilated current.

Re-cleaning is done just before the oil is squeezed out. For this, an installation with 2 boilers is used, one of which is equipped with an agitator, and the other - a centrifuge. Thanks to the conical bottoms, the poppy seeds enter the hopper, from where they are delivered to the cold-pressed press. Smallholder farms use a screw press that resembles a domestic meat grinder.

The oil flows into the boiler, and the cake, which is particles of dried gray paste, is loaded into the hopper. When preparing poppy flour, the raw materials are dried on racks in chambers at 40-60 ° C, and then ground in a roller mill with built-in sieves with a mesh size of no more than 300 microns.

End product characteristics

  • Permissible humidity - up to 9%;
  • Proteins - from 34%;
  • Lipids - up to 10%;
  • Ash - up to 7%.

The grinding is automatically packed into multilayer paper bags weighing 20-25 kg and additionally wrapped in polyethylene.

How to make poppy seed flour yourself

  1. The sieve is covered with gauze folded in several layers. The seeds are poured and washed several times with running water.
  2. Grind with a blender to a pasty state.
  3. The intermediate product is squeezed out and then dried. You can leave it indoors, spread out in one layer, but in this case the mixture may begin to mold - the process takes a long time. Therefore, it is better to place the wet cake in an oven preheated to 40-50 ° C, with the door ajar.
  4. As soon as the texture of the intermediate raw material becomes crunchy, you can start grinding. Cool the cake before pouring it into the bowl of a blender or coffee grinder. Preliminary degreasing of the seed was not carried out, therefore, it is ground at low speeds.
  5. It is possible to make poppy seed flour, as in the factory, from partially defatted cake, only if you have a screw juicer. The washed grains are ground, periodically pouring water into the juicer bell so that it does not get clogged. Then the cake is dried, as already described, and crushed.

Do not count on long-term storage of self-prepared poppy flour. Despite the laboriousness of the process, it is not worth preparing grinding on an "industrial scale". For storage, it is better to pour it into hermetically sealed coffee cans. Of course, they must be thoroughly washed, dried and ventilated.
