Any type of meat for this dish is suitable: beef, veal, pork, goose, chicken, etc. But the most common roast is pork. As you know, pork goes well with many ingredients. You can cook roasts in one large cauldron, but it is especially popular in portioned pots. So the food comes out much more aromatic and juicy, always looks more beautiful and interesting, and will not leave anyone indifferent.

  • To make the pork lose less meat juice, it is advisable to cut it with a sharp knife. The easiest way to cut meat is slightly frozen.
  • Pork should not be soaked in water, it is only passed through a stream of flowing water.
  • Salt the meat before stewing, not during frying. Salt draws juice out of it, making it less juicy.
  • The frozen pork is washed with cold water, and left in a container under a closed lid before thawing.
  • The meat is washed in one large piece so that the nutrients are not washed out of it with water. And only then cut it across the fibers in portions.

  • Pork - 1 kg
  • Dried porcini mushrooms - 50 g
  • Potatoes - 12 pcs.
  • Onions - 2 pcs.
  • Garlic - 6 cloves
  • Dried basil - 1 tablespoon
  • Mayonnaise - 6 tsp
  • Salt - 1 tablespoon no slide or to taste
  • Ground black pepper - pinch or to taste
  • Allspice peas - 12 pcs.
  • Bay leaf - 6 pcs.
  • Vegetable oil - for frying

1. Peel the onions, rinse, chop in half rings and sauté in a frying pan in vegetable oil until transparent.

2. Place the dried porcini mushrooms in a deep bowl, pour boiling water over and leave to swell for 15 minutes. Do not pour out the brine in which they are soaked. Strain it gently through cheesecloth to remove any dirt, then pour it over the pots before stewing. If you pour the mushrooms with cold water, then soak them for at least half an hour.

3. Peel the meat from film and fat. Rinse with cold water, wipe dry with a paper towel and cut into slices about 3-4 cm thick.

4. In a frying pan, heat the vegetable oil and put the pork in it. Set a high temperature and fry it, turning occasionally, until golden brown. The high heat will seal the pieces, thus retaining all the juice in them.

5. Prepare the portion pots in which to place the grilled pork.

For the preparation of such dishes, the best dishes are cast iron, ceramic or enamel. Glass or Teflon-coated stainless steel will also work.

6. Spread the sautéed onions evenly over the top.

7. Next, send the soaked porcini mushrooms to the pots.

8. Season foods with salt, ground pepper, dried basil, allspice and bay leaves. You can also add any spices and spices to taste.

9. Peel the potatoes, rinse, cut into 1.5 cm cubes and arrange in the pots. Top it with a little salt, pepper, sprinkle with finely chopped garlic and pour with mayonnaise. Also, pour mushroom brine into each pot. If it will not be enough for all servings, then add some drinking water.

10. Heat the oven to 200 ° C and send the pots to bake for 1 hour. Serve hot. And if you have to heat it up, you can use a microwave or oven.
