Curd envelopes… Combine cottage cheese (170 g), softened butter (230 g), sugar (2 tsp), salt (pinch), beat with a mixer for about 2 minutes on medium speed, then turn on the minimum speed and gradually stir in flour (325 g) … When all the flour is in the dough, turn off the mixer and start stirring the dough with your hands. Form a ball out of the dough, roll it into a layer, cut into 6x6 cm squares, put a teaspoon of jam (150 g total) in the center of each, pinch 2 opposite ends carefully.
