Beetroot, like okroshka, are cold soups, which are prepared first of all with the arrival of the summer heat. However, beetroot is not as popular as okroshka, from which many housewives do not know how to make it. Therefore, my step-by-step detailed recipe will help you in preparing this dish.

The classic beetroot recipe is always prepared with beet broth, which gives the dish its characteristic burgundy-pink color. The beetroot is filled with kefir, sour cream, mayonnaise, yogurt or yogurt. Pour it with bread kvass, meat broth or drinking water. Mandatory vegetables for this dish are boiled beets and potatoes, fresh cucumbers, green onions and dill. Additional ingredients can be boiled carrots and eggs, fresh radishes and any greens to taste. The dish is usually served cold.

However, it would be wrong if I keep silent about the existence of a recipe for hot beetroot. The difference between these two dishes is not only in temperature. Vegetables for hot beetroot are pre-stewed in a pan, tomato paste is used, and it is served accordingly hot.

Today I propose to you to cook cold beetroot on kefir and meat broth. The benefits of this dish are endless. So, kefir neutralizes toxins, improves digestion, reduces swelling and is rich in potassium. Beets are useful for poor digestion, difficult emptying, liver and gallbladder diseases, anemia, and diseases of the cardiovascular system. Cucumbers and herbs are also healthy ingredients.

The meat product that I used for this dish is duck, which contains many vitamins (A, E, K, group B) and minerals. Also, duck meat, due to its fat content, has a positive effect on potency. Vitamin A, which is twice as high in duck as in other types of meat, improves vision and skin condition. However, duck is fatty meat. Therefore, if you are overweight or obese, then replace it with dietary meat, such as chicken or rabbit.

Ingredients:

  • Beets - 2 pcs.
  • Duck meat - 500 g
  • Potatoes - 5-7 pcs.
  • Eggs - 5 pcs.
  • Cucumbers - 3-4 pcs.
  • Green onions - bunch
  • Dill - bunch
  • Kefir - 500 ml
  • Citric acid - 2 tsp or to taste
  • Vinegar - 1 tablespoon
  • Salt to taste

Cooking beetroot with kefir and meat broth

Despite the fact that the beetroot is cooked very quickly, the longest process is the boiling of the food. Therefore, do it in advance or have 5 hours of time.

1. So, wash the duck or other meat, cut into pieces, put in a saucepan and boil for about 1 hour. Then cool the broth completely, it is advisable to do this in the refrigerator, since fat forms on the surface of the pan, which must be removed with a slotted spoon.

2. Peel the beets, cut into cubes, put them in a saucepan, cover with water, salt, pour vinegar and boil until cooked, about 1, 5 hours. Vinegar is necessary to prevent discoloration of the beets; you can replace it with lemon juice. Chill the beetroot broth completely.

3. Rinse the potatoes under running water and boil in their uniforms in salted water, then let cool.

4. Hard boil the eggs. Then fill them with cold water to make them easier to clean.

5. When all the food is ready, start cooking the beetroot. I must say right away that all products are cut to the same size: into cubes, about 8 mm.

6. Peel the eggs, cut and place in a saucepan of a suitable size, about 5-5.5 liters.

7. Peel the potatoes, cut them and send them after the eggs.

8. Wash cucumbers, cut and put in a saucepan.
