Potato pancakes with meat are a Belarusian cuisine dish. The dish has several names: potato pancakes, sorcerers or thorns. It is an ordinary potato pancake, but inside with a meat filling. Although, however, the filling can be very different, for example, mushroom. This dish will turn out to be tasty and satisfying, therefore it is popular in many countries: Belarus, Ukraine, Russia, Moldova and other Eastern European countries. By the way, potato pancakes with minced meat are a favorite dish in Jewish cuisine. They do not use pork meat there, but veal, turkey or chicken.

The cooking scheme for potato pancakes is as follows. Peel and grate potatoes with onions on a medium or fine grater. To simplify your work, you can use modern kitchen appliances, a food processor or a meat grinder. Eggs are added to the resulting crushed mass, and some housewives still put flour. But it thickens the structure of pancakes, so I do not recommend putting it. As you can see, the cooking method is quite easy and not difficult. The dish is within the power of any chef.   • Potatoes - 4 pcs.
  • Onions - 2 pcs.
  • Eggs - 2 pcs.
  • Ground black pepper - a pinch
  • Pork - 400 g
  • Salt - 1 tsp or to taste
  • Vegetable oil - for frying

A step-by-step recipe for making potato pancakes with meat:

1. Peel the meat from the film, remove excess fat and veins. Place the meat grinder and twist it through the middle wire rack. Season the minced meat with salt, ground pepper and stir. To make it slightly liquid, pour in some drinking water. If desired, you can add twisted onions (fresh or pre-fried) and any spices to taste into the minced meat.

2. Peel, wash and chop the potatoes with onions for easy chopping.

3. Use a food processor to finely grate the vegetables. If there is no such appliance, then use a regular hand grater.

4. Transfer the vegetable mixture to a bowl. If it is too watery, then first soak it in a fine sieve so that all the liquid is glass.

5. Add salt, a pinch of pepper to the potato mass and pour in the eggs.

6. Stir well.

7. Heat a frying pan with vegetable oil and lay out a portion of the potato dough, forming a thin oval or round pancakes with a tablespoon.

8. Place a small layer of minced meat on top.

9. Cover the minced meat with the potato mixture, turn on the medium temperature and fry the pancakes for 3-4 minutes until golden brown.

10. Flip the potato pancakes over, press down with a spatula and cook for about 3 minutes more. You should have a flat potato pie with meat filling. Serve the finished dish hot with sour cream, mushroom or garlic sauce.
